Simple and Tasty Korean Spinach Pancake Recipe

Ingredients
- 3 cups of all-purpose flour
- 2/3 cup of white rice flour
- 2 tablespoons of sugar
- 2.5 cups of cold water
- Salt to taste
- 2.5 cups of spinach
- Oil for greasing the pan
Instructions
Step 1: Make the dough
Mix the flour, salt, and sugar together in a bowl. Gradually add the water and use a spatula to stir until all the ingredients are well blended.
Step 2: Prepare the spinach
Wash the spinach and separate the leaves. Blanch by boiling in boiling water for a short time (1~2 minutes). Chill in cold water and then drain the water and chop into small pieces. Add the chopped spinach to the dough and mix together.
Step 3: Grease the pan
Heat a non-stick pan over medium-high heat and apply a thin layer of oil. Pour the dough onto the pan and spread it to an even thickness using a spatula.
Step 4: Cook the pancake
Cook the pancake for a few minutes on the first side until crispy and flipped over. Cook for a further few minutes until golden on the other side.
