Korean Mung Bean Sprout Soup Recipe (Sukju-namul-guk)-A Nutritious and Comforting Dish
Korean Mung Bean Sprout Soup (Sukju-namul-guk) is a delicious, nutritious and comforting dish hand-crafted by Koreans for centuries. The ingredients are simple but the flavor is subtle and complex. Combining mung bean sprouts, some vegetables and seasoning, this soup is packed with nutrients, minerals and vitamins. It’s a perfect accompaniment for any meal, picnic or potluck!
Ingredients
For the soup, you will need:
- 2 bunches of fresh mung bean sprouts
- 1/2 onion, diced
- 1/2 carrot, diced
- 2 cloves of garlic, minced
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of sesame oil
- 4 cups of vegetable broth
- 1/4 cup of soy sauce
Instructions
In a large pot, heat the sesame oil over medium-high heat. Add the onion, carrot and garlic and cook until softened, about 5 minutes. Add the mung bean sprouts, salt and pepper and cook for an additional 2 minutes. Pour in the vegetable broth and soy sauce, stir to combine and bring to a boil. Reduce heat to low and simmer for 20 minutes. Serve in bowls and enjoy!
Additional Tips
This soup is an excellent source of protein, vitamins and minerals, but adding other vegetables like mushrooms and spinach makes it even healthier. You can also vary the seasonings according to your taste or add a few tablespoons of gochujang (Korean pepper paste) for an extra kick of spice!
