Ingredients

The ingredients you will need for this delicious soup are: 2 lbs of pork neck bones, 1 onion, 1 zucchini, 1 red bell pepper, 3 cloves of garlic, 2 tablespoons of gochugaru (Korean red chili flakes), 1 tablespoon of sesame oil, 5 cups of water, 1 teaspoon of fish sauce, 2 tablespoons of soy sauce, and 1 tablespoon of vegetable oil for cooking. You will also need about 8 eggs for serving.

Instructions

To start, pour the vegetable oil into a large pot and heat on medium heat. Once the oil is hot, add the pork neck bones and give them a generous sprinkle of salt. Fry the pork neck bones until all sides are lightly browned, then add the onions, garlic, and the gochugaru. Continue to fry, stirring frequently, until the onions become lightly browned.

Next, add the zucchini, red bell peppers, sesame oil, soy sauce, fish sauce, and the 5 cups of water. Bring the soup to a boil, then reduce the heat and let it simmer for about 1 hour.

Once the soup is done cooking, add in the eggs and let them cook in the soup for 10 minutes – this will make them soft boiled. Serve the soup hot in bowls with optional toppings such as kimchi, rice, scallions, and sesame seeds.
