  • Gochugaru – 2 tablespoons (Korean hot pepper flakes)
  • Dashida (Korean beef powder) – 2 teaspoons
  • Soy sauce – 1 teaspoon
  • Beef stock – 6 cups (or chicken broth)
  • Salt – to taste
  • Black pepper – to taste

Instructions

  1. In a large pot, add in the pork shoulder, kimchi, tofu, shiitake mushrooms, garlic, and ginger.
  2. Sauté for about 5 minutes.
  3. Add in the gochujang, gochugaru, dashida, soy sauce, and beef stock.
  4. Bring to a boil, then reduce the heat to low and simmer for about 25 minutes.
  5. Add salt and black pepper to taste.
  6. Garnish with green onion and serve warm.
