Classic Korean Acorn Jelly Salad Recipe (Dotorimuk) – A Refreshing and Nutritious Side Dish

What is Dotorimuk?

Dotorimuk (도토리묵) is an acorn jelly salad made with finely chopped acorn jelly, carrots, mushrooms, onions, and bell peppers and served chilled. It’s a cool and refreshing accompaniment to Korean entrées that contains powerful health benefits. It’s a popular side dish that is simple to make and great for hot and humid summer days.

Ingredients:

– 1/2 cup acorn jelly, finely chopped
– 1/4 cup carrots, julienned
– 1/4 cup mushrooms, julienned
– 2 tablespoons onion, finely chopped
– 1 tablespoon bell pepper, finely chopped
– 1 teaspoon sugar
– 1 teaspoon sesame oil
– 1/2 teaspoon sesame seeds, roasted

– 2 tablespoons vinegar
– 2 tablespoons soy sauce
– 2 tablespoons minced garlic
– Pinch of salt
– 2 tablespoons vegetable oil

Directions:

1. In a large bowl, combine acorn jelly, carrots, mushrooms, onions and bell pepper and mix completely.
2. In a small bowl, mix together sugar, sesame oil, sesame seeds, vinegar, soy sauce, minced garlic, and a pinch of salt.
3. Heat the vegetable oil in a large skillet over medium-high heat. When the oil is hot, add the acorn jelly mixture and cook for about 5 minutes, stirring often. Lower the heat to low and add the sauce mixture. Cook for an additional 5 minutes, stirring constantly to incorporate the ingredients.
4. Allow the salad to cool completely.
5. Serve chilled as a side dish.
