Ingredients

Jjimdak is a traditional Korean steamed chicken recipe with vegetables, dumplings, and noodles. It is a popular dish, with a hearty flavor that often pairs well with cold noodles. To make this recipe, you will need:

  • 500g chicken thighs, cut into 2-inch pieces
  • 4 cloves of garlic, minced
  • 1 onion, sliced
  • 3 pieces of burdock root, cut into 2-inch pieces
  • 1 cup zucchini, cut into 2-inch pieces
  • 2 pieces of shiitake mushrooms, sliced
  • 1/4 cup of red pepper powder
  • 1/4 cup of soy sauce
  • 2 tablespoons of sugar
  • 2 tablespoons of sesame oil
  • 2 tablespoons of oil
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of ginger powder
  • 2 cups of cooked udon noodles
  • 2 cups of cooked dumplings

Instructions

Start by marinating the chicken in a mixture of red pepper powder, soy sauce, sugar, sesame oil, oil, black pepper, and ginger powder. Allow it to marinate for at least one hour.

Once the chicken is marinated, heat two tablespoons of oil in a large pot over medium heat. Add the garlic, onion, burdock root, zucchini, and mushrooms, and cook for about five minutes. Then, add the marinated chicken and cook for another five minutes.

Finally, stir in the udon noodles and dumplings. Cover and reduce the heat to low. Simmer for at least 20 minutes or until the noodles are cooked through. When ready, serve the jjimdak with steamed white rice.
